Carrot toasties

Carrot toasties are great substitute for all bread lovers out there. They are healthy, light and have this slightly sour dough taste. As many of you know I come from Poland and in our culture we eat bread, or any sort of canapes up to three times a day. Yes I know, it's crazy. As part of my diet change I was giving up eating all of my gluten free bread, which did not serve me at all. The thought of giving it up completely though was a thought I could not bare. So I've decided to experiment a little and make healthier version of toast. My carrot toasties go great with salads or my favourite guacamole spread. This toasties are simply divine so why don't you try it for yourself. I know you'll love them as much I do.

For one baking tray (30x25cm) you will need:

  • 350g carrot pulp; juice leftover

  • 4 tablespoon flax seeds

  • 3 tablespoon of water

  • 1 tablespoon of soya sauce, I use gluten free kikkoman

  • pinch of salt and pinch of pepper

What to do?

  1. Place all ingredients in a mixing bowl, mix all well with spoon or hand until well combined

  2. Lay baking paper on the form you will be using

  3. Place all toasties dough on baking paper and spread evenly and thinly ca 1cm

  4. Cut with knife size of you toasties

  5. Put in the oven for 150C

  6. If toasties will start to get too brown after 30 min, lower temperature to 120C and keep it there

  7. After one hour turn with spatula all toasties and bake for another 40 min to 1h until dry

  8. Enjoy with spread of you choice, whether savoury or sweet

Carrot toasties stay fresh for upto 5 days.
