Summer cherry tart


My daughter and I spend this summer in the Polish countryside. We enjoyed fresh, home grown fruit and veg; simply delicious! When the cherry season started, there were so many, that I was creating many dishes to satisfy our taste and make most of it! One of them was summer cherry tart!


Summer cherry tart ingredients:

  • 1kg sweet or sour pitted cherries (fresh or frozen when making them out of season)

  • 200g almond flour

  • 4x table spoons of GF oat flakes

  • 4x tablespoons of coconut sugar

  • 2x teaspoons ground cinnamon

  • 1x tablespoon potato starch (optional)

  • 2x tablespoons coconut oil (cold pressed, unrefined)


Here is what to do:

  • Prepare your cake case with baking, non stick paper. I used 30cm diameter form

  • Place cherries in a mixing bowl, add 2x tablespoons of coconut sugar, potato starch (if you're using) and mix with hands until cherries are covered in sugar and starch evenly; add more sugar if you prefer it to be sweeter

  • Place cherries in baking case, then place it aside

  • Put the rest of ingredients in another mixing bowl and mix well with hands until dough is loose but crumbly. Add more sugar if you find in not sweet enough ;) Sprinkle dough evenly over cherries

  • Bake in the oven at 180 C for 50 min. Leave cherry tart to cool down and settle. Serve in room temperature


Tips for the tart:

  • Use more cherries in the tart if you have a big family to feed, it'll be thicker, and have more portions to serve

  • Why not try mix of frozen berries in Winter months or thickly sliced apples, different fruit will give amazing summer taste to the tart too!
