Yummy carrot pizza for children!
Yes you're reading it right. After many many months of chucking my carrot pulp, (leftover from juicing) to the bin, I thought - enough is enough - it's time to make good use of that too. So I came up with this awesome carrot pizza dough, which not only tastes like a good slice of pizza, but also is created in mind with our children! They need simple, but nutritious food in their growing years. Too often we are concerned, that they're reaching unhealthy, processed fast foods. So in order to help them satisfy their needs here is a healthy choice pizza for them. It is great for early noon snack, lunch, dinner or for a school lunch box. Most importantly this pizza is nutritious, made from healthy ingredients, and easy to make. Your little ones will love it. This mini pizza is suitable for children with tummy conditions like coeliacs, dairy intolerances or nut allergies. Win win and win! So let's get started.

For 10x mini pizzas you will need:
200g of carrot pulp, ( leftover from my morning juice). Optionally you can finely grate carrots in box grater and squeeze juice out carrot juice in a muslin cloth. Carrot pulp need to be juice free, otherwise it will take forever to dry it in the oven.
2 tablespoon of maseca flour (special maize tacos flour), or any other flour you use. It's my favourite savoury making flour suitable for coeliacs, as it combines nicely dough and its delicious
2 teaspoon oregano
Himalayan salt, pepper
What to do?
Mix all pizza dough ingredients well in a bowl. Make sure you taste the dough before shaping it, as it should be full of oregano flavours, which will in the end give the real pizza taste ;)
In the meantime preheat the oven to 180C.
Form small flat and thin discs in your hands, lay each of them on the non stick backing paper. Optionally you can use round 20 cm diameter form and lay one big pizza base, if you prefer. I love mini pizzas for my three year old, as she helps herself with it and it's easy for her to eat. Perfect finger food!
Bake in the oven for 15 min, then turn pizza discs and bake for further 5 min. Take pizza out, spread tomato sauce on them and add your children's favourite toppings, but in a mini size. Be creative and have fun with it, ask your children to help in decorating their pizza, being mindful that pizza will be hot.
Once ready put pizza back in the oven for 5 min. Enjoy with ketchup or just as they are!
Tomato sauce preparation:
One medium ripe tomato
One small white onion
Chop finely tomato and onion, bled in in the blender or food processor until smooth, add pinch of salt, pepper and a little of oregano. Done!
